Little Moons are frozen and chilled mochi, a fusion of Eastern and Western cuisine – soft and chewy rice flour dough wrapped around balls of ice cream, cheesecake, or chocolate ganache to create a distinctive, bite-sized, and delicious dessert that’s bursting with flavour. 

Their rollout across Europe has been pioneered by sister and brother duo Vivien and Howard Wong, who founded Little Moons in 2010.  The product’s roots are in high-end restaurants, but over the last five years retail packs have swept the ice cream category in grocery and food service. 

Little Moons has rapidly established mochi, and snacking ice cream, across Europe. In 2024 we generated more than £60m revenue, and in 2025 we continue to drive towards double digit growth. We are also now a Certified B Corporation, which reflects our strong commitment to balancing profit and purpose. The Role: 

As the Head of Technical, you will play a pivotal role in supporting our business as we continue to grow and evolve. You will lead the development and execution of the Technical Function, ensuring alignment with our strategic goals while driving innovation and excellence in technical operations. Acting as a key business partner, you will collaborate closely with internal stakeholders to implement effective technical strategies that enhance our processes, quality, and customer satisfaction.

 In this role, you will be accountable for shaping, maintaining, and leading the technical agenda across our sites and within our customer relationships. You will manage all technical matters for Little Moons, ensuring that our products meet the highest standards of quality, safety, and compliance. Key Responsibilities: 

  • Develop and implement the technical strategy on a day-to-day basis ensuring that all technical standards and legislative requirement are achieved.

  • Leading the Technical function ensuring they meet and exceed exacting business demands for technical excellence

  • Lead and advise on statutory regulations and company standards relating to best practice in food safety and quality

  • Full responsibility for building relationships with technical team, supply chains, including customer audit preparation and supervising audits to a high standard

  • Ensure that technical governance is in place to deliver audit compliance with respect to internal, external, legal and customer requirements.

  • Develop and monitor departmental, site and business KPI's and develop a quality culture to ensure targets are achieved and standards and continuously improved.

  • Provide leadership and direction to ensure that within the function people are kept safe, engaged, focused, developed, and delivering to their potential and are supported effectively to deliver products to the required specifications, legislation, and customer standards by promoting a safety culture across the business.

  • Implementation and maintenance of the BRC accreditation across LHQ and Salsa for Unit 3

  • Keep abreast of all relevant legislation and where applicable, implement of new legislation, especially important for Little Moons’ 30 export markets

  • Provide Technical support for production trials and delivery of innovation projects.

  • Work closely with Supply Chain / Marketing / Operations etc…with the introduction of new raw materials, packaging materials and products.

  • Accountability for the management of internal and external specifications

  • Supplier Approval and development of robust VACCP and TACCP systems

  • Cost effective and technically robust delivery of NPD & EPD projects

  • Overhead budget control

  • Contribute to the business’ Sustainability strategy by delivering your Brighter Future Sustainability objectives, and supporting your direct reports to deliver theirs

 

Essential Requirements: 

  • Proven experience in a senior technical management role within chilled or frozen high care or high risk FMCG businesses, preferably with management experience leading teams in commercially challenging, results-driven, food manufacturing environments.

  • Experience creating, delivering, and implementing Technical Strategy throughout businesses.

  • Proven project management and audit skills.

  • Ability to influence and engage with all levels of the organization.

  • Strong IT skills.

  • HACCP Level 4 Qualification required.

  • Understanding of microbiology in high care food categories.

  • Deep understanding of allergens and allergen control.
